﷽  🌰🥜🍬Nuts Brittle🍬🥜🌰 Recipe: Ingredients  1 Cup white sugar ¼ Cup Water ½ Tablespoon/ 7 grams of Butter ¾ Cup Nuts ( I used sliced cashews, almond flakes, silvered pistachios, chopped almonds) Saffron and rose petals for garnish ( optional) Few drops of Vanilla essence Pinch salt Directions  Mix the nuts, rose petals, saffron strands and a pinch of salt. Grease a parchment sheet and place on a tray. In a pan on medium flame add sugar and water, stir and cook till sugar is dissolved. Once sugar has dissolved, stop stirring and turn the flame to low and wait for the sugar to caramelize. It took me about 10-15 minutes. Turn off the flame, add in butter, nuts, vanilla essence and mix. Pour onto parchment sheet immediately. Sprinkle a pinch salt on top( optional) It will be very hot.  Let it cool down completely for 1-2 hours. Break them into pieces and enjoy. The caramel gets hardened pretty quickly. ﷽ Fruit Custard Falooda A chilled and layered delight, Fruit Custard Falooda blends creamy custard, juicy fruits, soft vermicelli, basil seeds, and jelly—topped with a scoop of ice cream and a splash of rose syrup. This colorful dessert is perfect for festive occasions or warm summer days. Ingredients  For Custard 1 Litre Milk 4 Tablespoon Custard powder 6 Tablespoon Raw Sugar ( adjust according to required sweetness) Condensed milk ( according to taste, optional) 1 Teaspoon Vanilla Essence 1 Teaspoon rosewater For the Fruits Apple Pomegranate Pears Dates Mango Banana (to be added just before serving if using) Sugar, to taste Chopped nuts and dry fruits (optional, for extra crunch) You can use fruits of your choice. Avoid sour fruits like orange, kiwi, and pineapple. If using pineapple, cook it in sugar syrup first. Always add bananas just before serving to prevent them from turning black.     ﷽ Recipe: Ingredients  1 Cup Hung Curd Pinch Salt 2-3 Tbspn Thick Cream Few Saffron Strands ½ Teaspoon Cardamom Powder 2-3 Tablespoon Sugar ( adjust according to required sweetness) 1 Tablespoon Rose Water Directions To Make hung curd Place a strainer above a deep bowl. Place cheese cloth/ muslin cloth over the strainer  Add 1½-2 Cup full fat  yoghurt ( approx.) to the cheese cloth, cover and keep it in the fridge for 5-6 hours  💕I used the water from the yoghurt to make chapati.💕 To hung yoghurt/Curd, add thick cream and pinch salt. Grind saffron with some sugar, add in cardamom powder and rose water and mix well. Add this to the curd and mix well. Measurements and approximate and can be adjusted according to taste.

  🍫🍰🍨Chocolate Mug Cake with Ice-cream🍨🍰🍫 This is a quick and delicious microwave chocolate cake recipe to satisfy your instant craving. Recipe: 4 Tablespoon Whole wheat All purpose Flour 3 Tablespoon Raw Sugar 2 Tablespoon Coco powder ½ Teaspoon baking Powder Pinch salt 4 Tablespoon Milk 1 Tablespoon Oil 1 Teaspoon Vanilla 1 Tablespoon peanut butter ( optional) Chopped chocolate and walnuts ( optional) For serving Ice-cream Chocolate sauce Caramel sauce Nuts In a microwave size bowl ( bigger than 375ml) mix flour, sugar, coco powder, baking powder. Add milk, oil and vanilla and mix well. ( If using white flour 1st add 3 tbspn milk and add 1 tbspn if needed ie. If it's too dry) Add nuts, chocolate and peanut butter if using , and mix well . Microwave for 1 ½ minutes to 2 minutes. ( depends on the microwave) it took me 2 minutes at 900w. The cake will rise and the top will dry when it's done. ﷽ Kanafeh Recipe: Ingredients Kanafeh Dough -130g ( approximately) Sugar - 2 Teaspoon Rose water - 1 Teaspoon) Butter - 20g( soft at room temperature) Cream Cheese (kiri) - 2 Squares Thick cream - 125ml Mozarella Cheese - 2 Tablespoon Sugar Syrup (Recipe below👇) Directions Mix Kanafeh dough with Sugar, Rose water, (softened or melted) Butter. Mix well by shredding the dough with Hands. Mix kiri cheese (at room temp.) and thick cream. Grease a 6 inch baking pan. Spread half the kanafeh dough in the pan evenly. Spread some shredded mozarella cheese. Spread cheese+cream mix evenly. Some more Mozarella cheese. Rest of the kanafeh dough. Gently press the kanafeh dough. Bake at 200° C preheated oven for 15 minutes  Flip and bake the other side for 4-5 minute( optional for even browning) Pour Sugar syrup on top.  ﷽ Moist Chocolate Cake with Cream cheese frosting and Chocolate Ganache served in a Pudding Bowl. One of my family's favourites. I prefer serving the cakes in pudding bowls as it is easier and less messy without compromising the taste. Here I used the same bowl to bake the cake and serve it. Recipe For the cake Grease 20cm*20cm ( 8" x 8") square oven proof dish. Preheat the oven at 200°C Ingredients   1 Cup whole wheat All purpose flour @kfmkuwait 1 Cup raw sugar 1/3 Cup + 1 Tbspn Coco powder 3/4 Tspn Baking powder 3/4 Tspn Baking Soda 1/2 Tspn salt 1/2 Tspn instant coffee 1 Egg 1/4 Cup oil 1 Tspn vanilla essence 1/2 Cup milk (or buttermilk /laban) 1/2 Cup Boiling hot water Directions Sift flour, coco powder, baking powder, baking soda, salt.  ﷽ Layali Lubnan - Lebanese Night is an easy and delicious Middle Eastern Dessert.  The base layer is a semolina pudding flavoured with Orange blossom water and rose water. It is topped with a layer or  homemade Ashta or cream.  Then Garnished  with silvered pistachios and rose petals. Usually Served with orange blossom and rose flavoured sugar syrup. This pudding was sweet enough for me to enjoy without sugar syrup. But kids preferred little sugar syrup on top. Caramel Pudding

﷽ Easy and delicious pudding. Can be served warm or chilled. Blend egg, milk , sugar with vanilla and milk powder  pour over caramelized sugar and steam cook till done. I used the pulse mode in the blender and let it rest for a few minutes while  I caramelised the sugar. So there wasn't much foam in the custard. Recipe: Ingredients   For Custard 4 Eggs 1 Tspn Vanilla essence  ( cardamom powder also can be used fo flavor, but I prefer vanilla) 1/3 -1/2 Cup raw sugar ( can add more if you want it to be sweeter) pinch salt 4 Tbspn Milk powder 300 ml milk For Caramel 3-4 Tbspn Sugar Directions Add eggs, sugar, vanilla essence, milk powder, salt and milk to the blender. Mahalabia Recipe: (4 servings) 2 Cup Milk 4 Tbsp Cornstarch 5-6 Tbsp Sugar 125 ml Thick cream Pinch salt Few saffron strands ¼ - ½ Tbsp Rosewater ½-1 Tbsp Orange Blossom water Rose syrup, nuts and shredded coconut toasted in butter/ghee for garnish (optional) Mix saffron with orange blossom water and rosewater and keep aside. In a saucepan add milk, cornstarch, sugar and mix well. Stir and cook till it starts to thicken. Once its thickened stir well and cook for a minute before turning off the flame. Add in saffron soaked in orange, rose water, pinch salt and cream and mix well. In serving glasses add the custard, top it with rose syrup, toasted coconut and nuts.( Optional)

  Chocolate Banana Cupcakes These are very soft, moist and delicious cupcakes. These cupcakes can be enjoyed without any frostings. I used All purpose Brown flour and raw sugar in this recipe. White flour, sugar can be used as well... also for milk I added few drops of lime juice and kept it for few min. to make buttermilk substitute. Chocolate cakes with brown flour seems to be more moist than the one with white and there won't be any difference in taste as well. I've added peanut butter, honey and cinnamon to mashed banana, it is optional, but will give more flavor. This is a quick, easy and delicious mousse recipe. Recipe: Ingredients For Base Digestive biscuit  4-5 Melted butter (2-3 tbspn) Strawberry slices For Chocolate ganache Chocolate Thick cream For Nutella Mousse Whipping cream Sugar Vanilla essence Nutella Condensed Milk For decoration (optional) Caramel Sauce Cream Directions Base Crush the digestive biscuit and mix with melted butter. Chocolate ganache Chopped chocolate +thick cream (1:1) Microwave  for 30s add butter and vanilla essence and mix well Nutella mousse Whip the whipping cream with sugar and vanilla essence add condensed milk and nutella and mix well Layering In a glass add digestive biscuit(base layer). Then place strawberry slices. Add the nutella mousse. Add chocolate ganache. Decorate with caramel sauce and cream. Refer to video for more details . Even though it sounds simple, it really is a very delicious dessert.

  Recipe: Qatayef Pastry Batter Ingredients 2 Cups Lukewarm water 1/2 Tbspn. Active dry yeast @saf_levure 1 Tbspn Sugar or Honey @alshifaksa 2 Cups Flour @kfmkuwait 1 Tbspn. Semolina/Cornstarch @alalali_me 1/2 Tspn. Salt @alwazzanfood 1/4 Cup Lukewarm Milk @kdcow.kdc 1/2 Tspn. Rosewater 1/2 Tspn. Orange Blossom Water. Directions . Proof year in lukewarm water with sugar. Mix well Mix Flour, Semolina & Salt. Pour the yeast mix and stir well. Add milk, rosewater & Orange blossom water.  Mix well and cover and let it rise for 15-30 min. Pour in a pan and cook till the top is dried completely.  Keep the cooked qatayef covered with a cloth. Cheese Qatayef Fill the qatayef with 1/2 square kiri cheese. Seal the edges by pressing them. Deep fry in oil. Can be air-fried or baked in the oven. Drizzle with maple syrup or honey or sugar syrup and garnish with ground pistachios and enjoy.
