Ingredients
2 Eggs
1.5 Cup Milk
1-2 tbsp. Oil (or melted butter)
1/2 tsp. Vanilla Essence
1 Cup Flour
Directions
Pour in a pan and cook on both sides.
Plantain Stuffed Crêpes
Plantain- Coconut filling
Ingredients
2 Plantains (Big Banana or Cooking Banana)🍌
1 Tbsp. Coconut oil/ Butter ghee
1/8 -1/4 Cup Grated Coconut
2-3 Tbsp. Jaggery / Brown Sugar
1/2 Tsp. Cardamom Powder
A pinch of Salt
Nuts and Raisins for Garnish
Directions
Cut the plantain into small pieces and sauté in coconut oil or ghee till it turns golden brown.
In a side add more ghee/ coconut oil and add grated coconut, jaggery/brown sugar, cardamom powder and salt. Mix well and cook.
Garnish with nuts and raisins.
Take a crêpe spread some butter add the plantain Filling and roll. Drizzle with honey or Maple syrup (optional).
Strawberry and Cream Cheese Crêpes
Ingredients

Cream Cheese
Strawberry Jam
Strawberry Slices
Chocolate Syrup and Nuts for garnish
Directions
Spread Cream cheese on half the portion of crêpe.
Add sliced strawberries on top.
Spread Strawberry Jam on the other half.
Fold, drizzle some chocolate syrup and nuts for garnish.
Nutella Banana Crêpes
Ingredients

Nutella
Banana Slices
Whipped Cream
Honey, Choco chips for garnish
Directions
Spread Nutella, top it with banana slices and whipped cream roll.
Drizzle some honey or maple syrup on top.
And nuts and Choco chips as garnish.
Crêpes whether sweet or savory, combinations are endless, these are some of my personal favorites. My elder one loves to eat it with just butter and sugar.
