Ghee Rice & Butter Chicken

 ﷽ Ghee Rice & Butter Chicken Ghee Rice Ingredients: 2 Cups Basmati Rice 1 Small onion 1-2  Tablespoon Oil + Ghee Salt as needed Whole Spices 4 Green Cardamom  5 Cloves 1 Black Cardamom  1 Bay Leaf 1 Cinnamon stick 3½ Cup Water Juice of ½ Lime ½ Teaspoon cardamom powder Nuts and raisins fried in ghee ( for garnish, optional) Directions Wash the rice and soak for 10-15 minutes. In a Saucepan add oil+ ghee, add in whole spices and thinly sliced onion and sauté till onion is translucent. Add in water, salt and lime juice and bring to boil. Drain and add the rice and let it come to a boil. Lower the flame, cover and cook for 10-15 min. Or till done. Garnish with nuts and raisins.

Yoghurt Curry ( മോരു കാച്ചിയത്)

 ﷽  This is a simple and delicious yoghurt curry which goes well with plain rice. This was my favourite curry while growing up. A simple, easy and delicious curry . Recipe : Ingredients   1 Tablespoon Coconut oil 1 Teaspoon mustard seeds 1 Teaspoon chilli flakes ( dry red chilli) ½ Teaspoon cumin seeds ½ Teaspoon fennel seeds A pinch hing 2-3 Shallots finely chopped 5-6 Curry leaves ½ Teaspoon ginger paste ( or finely chopped ginger) ½ Teaspoon Turmeric Powder Salt as needed 1½-2 Cup yoghurt whisked well Directions In a pan add coconut oil, when its hot add mustard seeds, chilli flakes, cumin and fennel seeds and hing. Add in curry leaves, ginger and shallots and mix well. When it is cooked lower the flame and add in turmeric powder and salt. Aviyal

﷽   Aviyal is a traditional south indian curry usually seen with sadhya or south indian tali meals. It is usually seen as a dry side dish. But we like it as the main curry with plain rice. I am not sure whether this is the authentic way to make aviyal, but we enjoy it this way. Steps are similar, but I've adapted it according to our taste preference.  Recipe: Ingredients To cook Vegetables 1 drumstick cut in sticks 2-3 Lady fingers cut in sticks A piece of pumpkin cut in cubes 1 carrot cut in sticks  A piece of Raw mango ( optional) Half onion roughly cut Half tomato roughly cut Water enough to cover the vegetables Salt 1 teaspoon turmeric powder Use Vegetables  according to your preference.   Foul with cheese and eggs An attempt to recreate the yemeni style foul we had from saudi. We tried different types of foul from different yemeni restaurants available in kuwait( which is very few). nothing came close to the one we had. Turkish Style Chicken

  This is an easy and delicious Chicken curry. It goes well with any flatbread like chapati, naan, poratta, pathiri etc.  The Chicken is marinated with herbs and spices and shallow fried in oil. Then topped with bechamel sauce and mozzarella cheese. I tried adding cooked pasta in the leftover curry and it turned out to be a very delicious pasta dish. Recipe : Ingredients  Boneless chicken breast cut in cubes  Ginger garlic paste Lime juice Yoghurt Tomato paste Home made Taco seasoning ( Recipe card Below)👉Or add onion powder ,garlic powder, paprika powder,chilli powder,cumin, black pepper,oregano👈 Bechamel Sauce ( recipe below) Directions  Marinate the chicken with above ingredients and keep refrigerated for at least an hour. Stuffed Chicken

  Recipe: Ingredients 800g Chicken Marinade:  Ginger Garlic paste  Salt  Chili powder (or paprika)  Turmeric  Garam Masala  Ground Fennel Meat Masala (optional) Coconut oil 3-4 Big onions 2-3 Tomatoes Ginger Garlic Green chilly (according to your spice level) Curry leaves Boiled eggs and coriander leaves for garnish Directions Marinate the Whole chicken inside and outside with the marinade ingredients. (I marinated and kept overnight) Sauté ginger garlic, chilly and curry leaves in coconut oil. Add sliced onions and sauté well. Add in tomatoes and cook well. Add salt and spices if needed. Shallow fry chicken on all sides in coconut oil. (I moved aside the masalas and fried chicken in the same pan check the video) Mix and pressure cook on low for 30 min. Can be done in sauce pan as well but time may vary. If there is too much liquid, dry them by cooking for few min. With lid open. Garnish with boiled eggs and coriander leaves.
