Foul with cheese and eggs
An attempt to recreate the yemeni style foul we had from saudi. We tried different types of foul from different yemeni restaurants available in kuwait( which is very few). nothing came close to the one we had.
After watching many videos and a few failed attempts I came up with this delicious foul recipe which was close to the one we had. served with homemade malaweh bread

Ingredients
- 1-2 tbspn Olive oil
- 2 garlic pods crushed
- 1 big onion finely chopped
For Tomato Salsa
- 3 Tomatoes
- Handful parsley/ coriander leaves
- A piece of capsicum
- Pickled Jalapeno/ 1 green chilli
- 1 tspn vinegar
- Tomato paste
- Salt
- Pepper
- Ground Cumin
- Ground coriander
- Paprika powder
- Kashmiri chilli powder ( optional)
- 1 can plain fava beans
- Washed and drained
- Water to blend fava beans
- 2-3 tbspn Cream cheese
For Tahini sauce
- Tahini
- Lime juice
- Little Water
- Salt
- Pepper
- Cumin
For Scrambled egg
- 2 Eggs
- Salt, pepper
- 1 tspn cream cheese
- Butter
In a pan add olive oil and saute garlic, onion. Blend the ingredients for salsa. Reserve some for garnish and add the rest to the pan.
Add in tomato paste, salt, pepper, cumin, coriander and paprika.
Mix well and cover and cook on low flame.
Blend the beans with water. Pour to pan add little water ( adjust water to desired thickness) mix well and cover and cook on low flame for 10-15 min.
It will thicken, add water if needed.
Add in cream cheese and mix well.
Adjust the salt spices according to taste..
Make the scrambled eggs.
Add salt, pepper to the reserved salsa and mix well and keep refrigerated till use.
Add lime juice to tahini and mix well.
It will thicken,
Add in little water and mix well.
Add salt, pepper, cumin powder, mix well and keep refrigerated till use.
Serve the foul in a dish, top it with scrambled eggs, salsa and tahini sauce.
Can drizzle some olive oil on top as well.
