Ghee Rice & Butter Chicken

Ghee Rice

Ingredients:

  • 2 Cups Basmati Rice
  • 1 Small onion
  • 1-2  Tablespoon Oil + Ghee
  • Salt as needed
  • Whole Spices
    • 4 Green Cardamom
    •  5 Cloves
    • 1 Black Cardamom
    •  1 Bay Leaf
    • 1 Cinnamon stick
  • 3½ Cup Water
  • Juice of ½ Lime
  • ½ Teaspoon cardamom powder
  • Nuts and raisins fried in ghee ( for garnish, optional)

Directions

  • Wash the rice and soak for 10-15 minutes.
  • In a Saucepan add oil+ ghee, add in whole spices and thinly sliced onion and sauté till onion is translucent.
  • Add in water, salt and lime juice and bring to boil.
  • Drain and add the rice and let it come to a boil.
  • Lower the flame, cover and cook for 10-15 min. Or till done.
  • Garnish with nuts and raisins.

Butter Chicken 

Ingredients 

To marinate Chicken

    • 2 Boneless Chicken breast cut in cubes
    • 1 Teaspoon Ginger garlic paste
    • 1 Teaspoon Paprika powder
    • ½ Teaspoon Kashmiri chilli powder
    • ½ Teaspoon Garam Masala powder 
    • ½ Teaspoon Fennel powder
    • ½ Teaspoon Cumin powder
    • ½ Teaspoon Meat masala powder ( optional)


For Masala

    • 1 Tablespoon oil
    • 1 Teaspoon Ginger- Garlic paste
    •  1 onion roughly chopped 
    •  4 tomatoes roughly chopped
    •  few cashews
    • 1 tablespoon jaggery
    • 1 teaspoon vinegar


Whole spices 

    • 1 bay leaf
    • 2-3 green cardamom
    • 1 cinnamon stick 
    • 4-5 cloves
    • 1 black cardamom

  • Salt
  • ¼ Teaspoon Turmeric powder
  • ½ Teaspoon Fennel
  • ½ Teaspoon Cumin
  • ½ Teaspoon Garam Masala
  • ½ Teaspoon meat Masala (optional)
  • 1 Teaspoon Kasuri Methi
  • 125 ml Thick Cream
( Measurements are approximate, adjust according to taste)

Directions 

  • Marinate the chicken and keep aside.
  • In a pan add oil, ginger garlic paste, onion roughly chopped , tomatoes roughly chopped, few cashews, jaggery, vinegar and cover and cook on low flame till done.
  •  Let it cool and blend to make masala.
  • In the pan add oil+ ghee and shallow fry the chicken.
  • Add the whole spices.
  • Add in the masala paste and little water. Adjust the salt, add turmeric, fennel, cumin, meat masala and garam masala.
  • Cover and cook on low flame for few minutes. Add in kasuri methi, crushed pepper and thick cream .
