Avocado Egg Toast

Ingredients:

  • 4 bread slices

  • 1 ripe avocado

  • Salt & pepper (to taste)

  • 1 tsp lime juice

  • 4 eggs

  • ½ tsp paprika (optional)

  • Butter or garlic butter

Instructions:

  1. Toast the bread: Spread butter (or garlic butter) on each bread slice and toast in a pan or oven until golden and crisp.

  2. Prepare the avocado spread: Mash the avocado with salt, pepper, and lime juice until smooth.

  3. Cook the eggs: Fry the eggs sunny-side up, seasoning with salt, pepper, and paprika (if using). Alternatively, you can use boiled, poached, or scrambled eggs.

  4. Assemble: Spread the mashed avocado over the toasted bread slices, top each with a cooked egg, and enjoy!
