Soft, fluffy, and lightly sweet, this vanilla tea cake is a classic comfort bake. Made with simple ingredients, it’s perfect for tea time or any quiet moment. Enjoy it plain, iced, or with warm milk — every slice melts in your mouth.
Ingredients
Wet Mix:

½ cup raw sugar (powdered)

⅓ cup oil + melted ghee/butter (or use either one)

1 teaspoon vanilla essence
Dry Mix:

1 cup flour (replace ⅛ cup flour with ⅛ cup corn starch or custard powder for a lighter cake)

1 teaspoon baking powder

½ teaspoon salt
Instructions

Preheat the Oven
Preheat your oven to 180°C (350°F). Grease your baking pan with butter or oil. -
Prepare the Wet Mix
Beat the eggs in a large bowl, gradually adding the powdered sugar. Continue to beat until the mixture turns a pale yellow. Add the milk, oil, and vanilla essence, then beat gently until combined. Be careful not to overbeat. -
Prepare the Dry Mix
Sift together the flour, baking powder, and salt. -
Combine Wet and Dry Mixes
Gradually add the sifted dry mix to the wet ingredients, gently folding it in with a spatula. Be gentle, as over-mixing can result in a dense cake. The batter will be thin, but that’s exactly what you want for a soft texture. To check the consistency, you can do the ribbon test: lift the spatula from the batter—if it falls in a smooth ribbon, it’s ready! -
Bake
Pour the batter into your greased pan and spread it evenly. Bake at 180°C for about 30 minutes, or until a skewer inserted in the center comes out clean. -
Cool and Serve
Allow the cake to cool on a wire rack. Once cooled, enjoy it plain with a cup of tea, or ice it for a more decadent treat. If you want to make milk cakes or iced cakes, bake them in a wider pan.

This cake is milder in sweetness. If you prefer a sweeter version, simply increase the sugar.
