Grilled Paneer with Cherry Tomatoes & Olives

This Grilled Paneer with Cherry Tomatoes & Olives is simple yet vibrant. The golden-crisp paneer pairs beautifully with juicy tomatoes, briny olives, and a touch of zaatar for a Mediterranean twist. Perfect as a light meal, starter, or even a side to your main course.
Ingredients
- 200g paneer, cut into cubes
- Salt, as needed
- Paprika or chilli powder ( optional)
- 1–2 tbsp butter or oil
- Cherry tomatoes, whole or halved
- Olives (green or black)
- 1–2 tsp zaatar spice mix (or oregano)
- Olive oil, for drizzling
- Fresh basil or parsley, for garnish
Method
1️⃣ Cook the paneer – Heat butter or oil in a skillet over medium heat. Add the paneer cubes, season with salt, paprika or chilli powder ( if using) and cook until golden on all sides.
2️⃣ Add tomatoes – Add the cherry tomatoes and cook until softened with a slight char.
3️⃣ Toss in olives – Add the olives and switch off the heat.
4️⃣ Season – Sprinkle with zaatar (or oregano) and drizzle with olive oil.
5️⃣ Garnish & serve – Finish with fresh basil or parsley. Serve warm.
