Ingredients

  1. Fruits & Wet Mix

    • 1 Apple (peeled, seeds removed)
    • 1 Banana (small or ½ large)
    • 1 Carrot (peeled, chopped)
    • 10 Dates (seedless)
    • 6 Small dried Figs
    • 2 Eggs
    • ½ Cup Raw Sugar ( more to make it sweeter)
    • 1 Cup Milk
    • 200 ml Oil ( or melted butter/ghee for extra richness)
    • 1 tsp Vanilla extract
    • ¼ tsp Cinnamon powder (optional)
    • ½ tsp Orange rind (optional)

2. Dry Mix

    • ⅔ Cup Brown All purpose flour (or whole wheat)
    • ⅓ Cup Cocoa powder
    • 1 tsp Baking powder
    • ½ tsp Baking soda
    • ½ tsp Salt

3. Add-ins (optional)

    • Crushed nuts
      • Walnuts
      • Cashews
      • Almonds
    • Chocolate chunks or chips

Method

1. Prepare Dry Mix

    • Sift together brown flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

2. Soften Dried Fruits (optional for easier grinding)

    • Soak dates and figs in a few tablespoons of warm milk (from the recipe’s 1 cup) for 5–10 minutes to soften.

3. Prepare Fruit Base

    • Add apple, banana, carrot, soaked dates, and figs to a grinder jar or food processor. Blend into a smooth paste.

4. Blend Wet Ingredients

    • Add eggs, sugar, cinnamon powder, vanilla, and orange rind (if using) to the fruit paste. Blend again until smooth.
    • Pour in the remaining milk and oil, and blend until combined.

5. Combine Wet & Dry

    • Pour the blended mixture into the dry mix bowl.
    • Gently whisk until just combined (avoid overmixing).

6. Add Extras

    • Fold in crushed nuts and/or chocolate if desired.

7. Bake

    • Grease a baking pan and pour in the batter.
    • Bake in a preheated oven at 200°C for 40–45 minutes, or until a skewer inserted in the center comes out clean.

8. Serve

    • Cool slightly before slicing.
    • Enjoy with ice cream, salted caramel sauce, and roasted peanuts for an indulgent dessert.

✨Tips

  • Can be prepared in a food processor instead of a grinder jar for convenience.
  • Soaking dried fruits in warm milk ensures a smoother blend and prevents lumps.
  • For extra richness, add chocolate chips along with nuts.
