Skillet Cookies with Ice-cream and Chocolate sauce

Skillet Cookies

Ingredients

For the Cookie Dough:
  • 100g unsalted butter (soft at room temperature)
  • ½ cup raw sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • ½ tsp salt
  • ¾ tsp baking soda
  • 1¾ cups flour
  • 1 cup semi-sweet chocolate chips or chocolate chunks
For the Chocolate Sauce:
  • 2 tbsp chocolate (chopped or chips)
  • 2 tbsp milk
  • 1 tsp cocoa powder
  • A small piece of butter
  • A few drops of vanilla extract

Instructions

Step 1: Make the Cookie Dough

  1. In a bowl, mix butter, raw sugar, and brown sugar until well combined.
  2. Add egg and vanilla essence and mix well.
  3. Sift in flour, salt, and baking soda, then mix until fully incorporated.
  4. Fold in the chocolate chips or chunks and mix until evenly distributed.

Step 2: Bake in the Skillet

  1. Grease an 8-inch (20 cm) cast iron skillet with butter or oil.
  2. Spread half of the cookie dough evenly in the skillet. (Freeze the remaining dough for later use. Or use a bigger skillet to bake the whole dough)
  3. Bake in a preheated oven at 175°C (350°F) for 15–18 minutes or until golden brown and slightly crispy on the edges.

Step 3: Prepare the Chocolate Sauce

  1. In a microwave-safe bowl, add chocolate and milk.
  2. Heat for 30–40 seconds or until the milk starts to boil.
  3. Let sit for a minute to allow the chocolate to melt.
  4. Stir in cocoa powder, a small piece of butter, and vanilla extract. Mix until smooth.

Step 4: Serve

  • Serve the warm skillet cookie with a scoop of ice cream and drizzle with chocolate sauce.
  • Enjoy straight from the skillet for a gooey, indulgent treat!

Notes:

  • If using a larger skillet, bake time may vary slightly.
  • You can add nuts, caramel, or a sprinkle of sea salt for extra flavor.
  • The frozen cookie dough can be used later for another skillet cookie or baked into regular cookies!
