Vegetable Omelette
Ingredients:
- ½ medium onion, thinly sliced
- ½ cup cabbage, finely chopped
- ½ cup carrot, grated
- 1 spring onion, chopped (both white and green parts)
- ¼ capsicum, thinly sliced
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 3 eggs
- 1 tbsp butter
Instructions:
- Prepare the mixture – In a bowl, whisk the eggs, then add all the chopped vegetables, salt, and pepper. Mix well.
- Cook the omelette – Heat a pan over medium heat and melt the butter. Pour the egg mixture and spread it evenly.
- Flip and cook – Once the bottom sets and turns golden, carefully flip and cook the other side until done.
- Serve – Enjoy hot with bread, chapati, or as is.
Optional Additions:
- Add a pinch of chili flakes or chopped green chilies for spice.
- Sprinkle some grated cheese before folding the omelette for extra flavor.
Notes: The consistency will of the egg mixture will be thicker, seems like it has more vegetables than the eggs.
