 Cajun Barley Risotto 


Barley is a nutrient-rich whole grain packed with fiber, vitamins, and minerals. It aids digestion, lowers cholesterol, and helps regulate blood sugar levels. Recipe

Ingredients:

  • 2 cups whole barley (rinsed and washed)
  • 1 tablespoon oil
  • 2–3 garlic cloves, crushed
  • 1 onion, diced
  • 2 tomatoes, pureed
  • 1 tablespoon jaggery (or brown sugar)
  • 1 teaspoon vinegar
  • 1 tablespoon tomato paste
  • 2 tablespoon Cajun seasoning Home made Cajun Seasoning
  • 4 cups boiling water or chicken stock
  • 1 chicken stock cube (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare Barley:
    Rinse the barley thoroughly under cold water to remove any impurities. Set aside.

  2. Sauté Aromatics:
    Heat oil in a pressure cooker over medium heat. Add the crushed garlic and diced onion. Sauté until the onions turn translucent and aromatic.

  3. Add Tomatoes:
    Stir in the tomato puree and cook for 2–3 minutes until the mixture thickens slightly.

  4. Season:
    Add tomato paste, jaggery, vinegar, Cajun seasoning, salt, and pepper. Stir well to combine the flavors.

  5. Combine Barley:
    Add the washed barley to the pressure cooker. Mix everything thoroughly, ensuring the barley is well coated.

  6. Add Liquid:
    Pour in the boiling water or chicken stock. If using, add the chicken stock cube and stir to dissolve.

  7. Pressure Cook:
    Close the lid and cook on high heat until the pressure cooker whistles once. Reduce the heat to low and continue cooking for 20 minutes.

  8. Release Pressure:
    Turn off the heat and allow the pressure to release naturally before opening the lid.

  9. Serve:
