Cajun Chicken Skewers
Cajun Chicken Skewers:
Ingredients:
- 350g-400g boneless chicken, cut into bite-sized cubes
- 1 teaspoon ginger-garlic paste
- 1 tablespoon plain yogurt
- 1 teaspoon tomato paste
- 1 tablespoon Cajun seasoning (adjust to taste) Homemade cajun seasoning recipe
- ½ tsp salt (or to taste)
- 1 teaspoon olive oil (plus more for grilling)
Instructions:

Prepare the Chicken:
- In a large bowl, combine ginger-garlic paste, yogurt, tomato paste, Cajun seasoning, salt, and olive oil. Mix well to form a smooth marinade.
- Add the chicken cubes to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for better flavor.

Prepare the Skewers:
- While the chicken marinates, soak wooden skewers in water for 15-20 minutes to prevent burning during cooking.

Assemble the Skewers:
- Thread the marinated chicken cubes onto the soaked skewers, Can add capsicum or onion in between each piece for extra flavour.

Cook the Skewers:
- Grill: Preheat a grill or grill pan over medium-high heat. Brush lightly with oil to prevent sticking. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Oven: Preheat the oven to 200°C (400°F). Place the skewers on a baking tray lined with foil or parchment. Bake for 15-20 minutes, turning halfway, until cooked and golden brown.
- Air fryer: Air fry at 205°C for 15 minutes turn the skewers and fry for 2-3 minutes or till it is done

Serve:
- Serve the Cajun chicken skewers hot with a side of your choice, such as a fresh salad, rice, or a dipping sauce like garlic yogurt or spicy mayo.
Tips:
- Cajun Seasoning: If using a store-bought mix, check the salt content and adjust accordingly. For homemade, mix paprika, cayenne, garlic powder, onion powder, oregano, thyme, and pepper. Check my previous post for my home-made Cajun seasoning mix recipe
- Juicier Chicken: Use chicken thighs for more juiciness, but breasts work well for a leaner option.
- Spice Level: Adjust the amount of Cajun seasoning or add a pinch of chili flakes for extra heat.
