Katsu Style Chicken with Curry and Rice This is my take on the classic Japanese-style katsu curry, using simple ingredients I usually have at home. Crispy fried chicken, a warm spiced curry, and fragrant rice — comforting and delicious! 🍛 Curry Ingredients: 1 onion, chopped 2 garlic pods, crushed A small piece of ginger, crushed 1 potato, cut into small cubes 1 carrot, cut into small pieces 1 apple, peeled and chopped 1 spring onion (white and green parts separated) 1–2 cups chicken stock (or 1 cube + water as needed) Salt and pepper to taste Spices: garam masala, meat masala, paprika or chili powder Optional: a drizzle of honey Method: Heat oil in a pan and sauté onion, garlic, ginger, and the white part of the spring onion until soft. Perfect served warm with ice cream and caramel sauce. Ingredients Fruits & Wet Mix 1 Apple (peeled, seeds removed) 1 Banana (small or ½ large) 1 Carrot (peeled, chopped) 10 Dates (seedless) 6 Small dried Figs 2 Eggs ½ Cup Raw Sugar ( more to make it sweeter) 1 Cup Milk 200 ml Oil ( or melted butter/ghee for extra richness) 1 tsp Vanilla extract ¼ tsp Cinnamon powder (optional) ½ tsp Orange rind (optional) 2. ﷽  Mini Pizza This is a very delicious mini pizza recipe. I usually make them ahead and refrigerate. And give them to school next day. Recipe: Dough 1 Cup Lukewarm milk 1 Tablespoon Active dry Yeast 1 Teaspoon Sugar 3 Cup All purpose Flour ½ Teaspoon Salt ¼ Teaspoon Baking Powder 3 Tablespoon olive oil 3 Tablespoon Sugar (optional) In Lukewarm milk mix 1 Tablespoon yeast and 1 Teaspoon sugar and let it proof for 5-10 minutes. Add Flour, salt, sugar, baking powder and mix well. Pour the yeast proofed in milk and oil to the flour and knead to a smooth dough. Knead for 10 minutes or till you get a smooth dough. Cover and let it rise for 1-2 hours. Roll the dough and cut in circles.
