Refined Fattoush Recipe

Introduction

Fattoush is a vibrant Middle Eastern salad known for its refreshing mix of crisp vegetables, fragrant herbs, and crunchy pita croutons. The star of this dish is the tangy-sweet dressing made with sumac and pomegranate molasses, bringing a perfect balance of flavors.


Ingredients

For the Salad:

  • 1 small head Romaine lettuce, chopped
  • 1 cucumber, diced
  • 3-4 radishes, thinly sliced
  • 1 small carrot, julienned (optional)
  • 2 tomatoes (deseeded and chopped) or cherry tomatoes, halved
  • ¼ cup pickled onions (thinly sliced onion mixed with salt, pepper, and vinegar; set aside for a few minutes)
  • ¼ cup fresh mint leaves
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped (optional)
  • 1-2 pita breads, cut into small squares and fried, baked, or air-fried (add just before serving)

For the Dressing:

  • 2 garlic cloves, crushed
  • 2 tbsp fresh lime juice
  • 2-3 tbsp olive oil
  • 1 tsp pomegranate molasses
  • 1 tsp honey (optional, balances acidity)
  • 1 tsp sumac
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Pita Croutons:

    • Deep fry, bake, or air-fry pita squares until golden and crisp. Set aside.
  2. Make the Dressing:

    • In a small bowl, whisk together garlic, lime juice, olive oil, pomegranate molasses, honey, sumac, salt, and pepper.
  3. Assemble the Salad:

    • In a large bowl, combine lettuce, cucumber, radishes, carrot, tomatoes, pickled onions, and herbs.
  4. Dress and Serve:

    • Drizzle the dressing over the salad and toss gently to coat.
    • Just before serving, add the crispy pita croutons to maintain crunch.

Fattoush is a middle eastern salad with fried khuboos(pita bread) croutons and vegetables like lettuce, cucumber, radish tomatoes etc Marinated with a dressing consisting of olive oil, sumac and pomegranate molasses.

Vegetables used


Romaine lettuce


Cucumber


Radish


Carrot


Tomatoes (without seeds or use cherry tomatoes) Pickled onions (mix thinly sliced onions with salt, pepper and vinegar and keep aside for few minutes)


Mint leaves, parsley and dill leaves


Pita breads cut in small squares and deep fried (or coat with olive oil and bake in the oven or airfry) add pita bread right before serving otherwise it'll get soggy


Marinade


2 garlic pods crushed


2 tbspn lime juice


2-3 tbspn olive oil


1 tspn pomegranate molasses


1 tspn honey


1tspn sumac


Salt and pepper as needed
