Dates Pickle (കാരക്ക അച്ചാർ )
Malabar style sweet and spicy dates pickle goes well with all rise dishes especially Biryani. It can also be enjoyed with other flat breads like chappathi, paratha, naan, roti etc.
Malabar Dum biryani is incomplete without dates pickle.
Ingredients

Coconut oil
1/2 tspn mustard seeds
1/2 tspn chilli flakes
few curry leaves
1 inch ginger finely chopped
5-6 garlic cloves finely chopped(more than ginger in qty)
2 green chilli chopped
a pinch asafoetida/hing
1 tbspn kashmiri chilli powder
1/2 tspn turmeric
1/2 tspn mustard + fenugreek powder
2.5 Cup Dates(pitted)
1/4 cup vinegar
1 cup hot water
2 tbspn jaggery(or use sugar)
salt as needed
Directions
------------------
▪️In coconut oil add mustard seeds, chilli flakes,curry leaves.
▪️Add ginger, garlic, green chilli stir and cook till done (raw smell disappears).
▪️lower the flame and add asafoetida/hing, kashmiri chilli powder, turmeric powder, mustard+fenugreek powder.
▪️Add pitted dates and cook for few minutes
▪️Add vinegar, hot water, jaggery/sugar and salt to taste.
▪️Cook till it thickens.
➖we prefer less spicy, sweet pickles. Adjust chillies, chilli powder, jaggery/sugar according to your taste.
