          Air-Fried Savoury crepes


Savory Crepes

A delicious crispy crepe roll filled with flavorful chicken and vegetables, coated in breadcrumbs for a crunchy finish.

For the Crepes

Ingredients
  • 2 eggs
  • 1½ cups milk/ water
  • 1–2 tbsp oil or melted butter
  • 1 cup flour
  • Pinch salt & pepper 
Instructions
  • Prepare the batter: In a blender, add eggs, milk, oil (or melted butter), pepper, flour and salt and blend.
  • Rest the batter (optional): Let it sit for 5–10 minutes for better texture.
  • Cook the crêpes:
  • Heat a non-stick pan over medium heat and lightly grease it with butter or oil.
  • Pour a thin layer of batter into the pan, swirling to spread evenly.
  • Cook for 1–2 minutes until the edges lift slightly, then flip and cook for another 30–60 seconds.

For the Chicken Filling

  • 1 cup chicken (cooked, shredded)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper powder
  • ¼ cup water
  • 1 tbsp oil
  • 1 tsp ginger (finely chopped)
  • 1 tsp garlic (finely chopped)
  • 2 tbsp spring onion whites (chopped)
  • 1 small onion (finely chopped)
  • ½ cup cabbage (shredded)
  • ¼ cup carrot (grated)
  • ¼ cup capsicum (thinly sliced)
  • ¼ cup corn kernels
  • 1 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • 2 tbsp spring onion greens (chopped)
  • 1 tbsp parsley (chopped)

For Coating & Cooking

  • 1 egg (beaten)
  • 1 cup bread crumbs
  • Oil for deep frying/shallow frying or cooking spray for air frying/baking

Instructions

Step 1: Prepare the Chicken Filling

  1. In a small pot, cook the chicken with salt, pepper, and water until fully cooked. Shred it and set aside.
  2. Heat oil in a pan over medium heat. Add ginger, garlic, and spring onion whites. Sauté until fragrant.
  3. Add the chopped onion and cook until translucent.
  4. Stir in cabbage, grated carrot, capsicum, and corn. Cook until the vegetables soften but still have a slight crunch.
  5. Add the shredded chicken and mix well.
  6. Pour in soy sauce and sweet chili sauce. Stir to combine, then turn off the heat.
  7. Mix in spring onion greens and chopped parsley. Let the filling cool slightly.

Step 2: Assemble the Crepe Rolls

  1. Lay a crepe flat on a clean surface.
  2. Place about 2 tablespoons of the filling near the bottom center, shaping it into a rectangle.
  3. Fold in both vertical sides, then roll from the bottom upwards to form a tight log.

Step 3: Coat the Rolls

  1. Dip each roll in beaten egg, ensuring it’s fully coated.
  2. Roll in bread crumbs, pressing lightly so they adhere.

Step 4: Cook the Crepe Rolls

  • Deep Frying: Heat oil in a pan and deep-fry until golden brown and crispy.
  • Shallow Frying: Heat a little oil in a pan and cook on all sides until crisp.
  • Air Frying: Preheat to 200°C and air-fry for 15-20 minutes, flipping halfway.
  • Baking: Bake at 200°C for 15-20 minutes, turning halfway through.

Serve hot with your favorite dipping sauce!
