Air-Fried Savoury crepes
Savory Crepes
A delicious crispy crepe roll filled with flavorful chicken and vegetables, coated in breadcrumbs for a crunchy finish.
For the Crepes
Ingredients
- 2 eggs
- 1½ cups milk/ water
- 1–2 tbsp oil or melted butter
- 1 cup flour
- Pinch salt & pepper
- Prepare the batter: In a blender, add eggs, milk, oil (or melted butter), pepper, flour and salt and blend.
- Rest the batter (optional): Let it sit for 5–10 minutes for better texture.
- Cook the crêpes:
- Heat a non-stick pan over medium heat and lightly grease it with butter or oil.
- Pour a thin layer of batter into the pan, swirling to spread evenly.
- Cook for 1–2 minutes until the edges lift slightly, then flip and cook for another 30–60 seconds.
For the Chicken Filling
- 1 cup chicken (cooked, shredded)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper powder
- ¼ cup water
- 1 tbsp oil
- 1 tsp ginger (finely chopped)
- 1 tsp garlic (finely chopped)
- 2 tbsp spring onion whites (chopped)
- 1 small onion (finely chopped)
- ½ cup cabbage (shredded)
- ¼ cup carrot (grated)
- ¼ cup capsicum (thinly sliced)
- ¼ cup corn kernels
- 1 tbsp soy sauce
- 1 tbsp sweet chili sauce
- 2 tbsp spring onion greens (chopped)
- 1 tbsp parsley (chopped)
For Coating & Cooking
- 1 egg (beaten)
- 1 cup bread crumbs
- Oil for deep frying/shallow frying or cooking spray for air frying/baking
Instructions
Step 1: Prepare the Chicken Filling
- In a small pot, cook the chicken with salt, pepper, and water until fully cooked. Shred it and set aside.
- Heat oil in a pan over medium heat. Add ginger, garlic, and spring onion whites. Sauté until fragrant.
- Add the chopped onion and cook until translucent.
- Stir in cabbage, grated carrot, capsicum, and corn. Cook until the vegetables soften but still have a slight crunch.
- Add the shredded chicken and mix well.
- Pour in soy sauce and sweet chili sauce. Stir to combine, then turn off the heat.
- Mix in spring onion greens and chopped parsley. Let the filling cool slightly.
Step 2: Assemble the Crepe Rolls
- Lay a crepe flat on a clean surface.
- Place about 2 tablespoons of the filling near the bottom center, shaping it into a rectangle.
- Fold in both vertical sides, then roll from the bottom upwards to form a tight log.
Step 3: Coat the Rolls
- Dip each roll in beaten egg, ensuring it’s fully coated.
- Roll in bread crumbs, pressing lightly so they adhere.
Step 4: Cook the Crepe Rolls
- Deep Frying: Heat oil in a pan and deep-fry until golden brown and crispy.
- Shallow Frying: Heat a little oil in a pan and cook on all sides until crisp.
- Air Frying: Preheat to 200°C and air-fry for 15-20 minutes, flipping halfway.
- Baking: Bake at 200°C for 15-20 minutes, turning halfway through.
Serve hot with your favorite dipping sauce!
