Bird nest baklava or osh el bulbul
Bird’s Nest Baklava (Osh El Bulbul)
Ingredients:
- 200g kataifi (knafeh) dough
- 100g unsalted butter, melted
- 1 tbsp sugar
- 1 tsp orange blossom water
- ½ tsp rose water (optional, for extra floral flavor)
- ½ cup whole pistachios (shelled)
For the Sugar Syrup:
- ½ cup sugar
- ½ cup water
- 1 tsp lemon juice
- 1 tsp orange blossom water
- 1 tsp rose water (optional)
- Saffron strands
Instructions:

Prepare the nests:
- Preheat oven to 200°C (390°F).
- Gently separate the kataifi dough and cut it into smaller strands.
- Take a small portion and roll it into a nest shape.
- Place each nest into a mini muffin pan to help hold its shape.

Prepare the butter mixture:
- Mix the melted butter, sugar, orange blossom water, saffron and rose water.
- Brush or drizzle the mixture generously over the kataifi nests.

Add the pistachios:
- Place 4-5 whole pistachios in the center of each nest.
- Drizzle a little more butter on top for extra richness (optional).

Bake:
- Bake for 10–15 minutes or until golden brown and crispy.

Prepare the sugar syrup:
- In a small saucepan, heat sugar and water until dissolved.
- Simmer for 5 minutes, then add lemon juice.
- Remove from heat and stir in orange blossom water (and rose water if using).
- Let it cool slightly.

Final Touch:
- Once the nests are baked, immediately drizzle the warm sugar syrup (or honey) over them.
- Let them absorb the syrup before serving.

- Serve warm or at room temperature.
