Bird nest baklava or osh el bulbul




Bird’s Nest Baklava (Osh El Bulbul)

Ingredients:

  • 200g kataifi (knafeh) dough
  • 100g unsalted butter, melted
  • 1 tbsp sugar
  • 1 tsp orange blossom water
  • ½ tsp rose water (optional, for extra floral flavor)
  • ½ cup whole pistachios (shelled)

For the Sugar Syrup:

  • ½ cup sugar
  • ½ cup water
  • 1 tsp lemon juice
  • 1 tsp orange blossom water
  • 1 tsp rose water (optional)
  • Saffron strands

Instructions:

  1. Prepare the nests:

    • Preheat oven to 200°C (390°F).
    • Gently separate the kataifi dough and cut it into smaller strands.
    • Take a small portion and roll it into a nest shape.
    • Place each nest into a mini muffin pan to help hold its shape.
  2. Prepare the butter mixture:

    • Mix the melted butter, sugar, orange blossom water, saffron and rose water.
    • Brush or drizzle the mixture generously over the kataifi nests.
  3. Add the pistachios:

    • Place 4-5 whole pistachios in the center of each nest.
    • Drizzle a little more butter on top for extra richness (optional).
  4. Bake:

    • Bake for 10–15 minutes or until golden brown and crispy.
  5. Prepare the sugar syrup:

    • In a small saucepan, heat sugar and water until dissolved.
    • Simmer for 5 minutes, then add lemon juice.
    • Remove from heat and stir in orange blossom water (and rose water if using).
    • Let it cool slightly.
  6. Final Touch:

    • Once the nests are baked, immediately drizzle the warm sugar syrup (or honey) over them.
    • Let them absorb the syrup before serving.
  7. Serve & Enjoy!

    • Serve warm or at room temperature.
