Bakhmiri (باخمري) – Soft & Fluffy Fried Bread

Bakhmiri is a delicious, slightly sweet fried bread that is soft on the inside with a crisp golden crust. Popular in Middle Eastern and East African cuisines, it pairs beautifully with shakshuka, curries, or even enjoyed on its own. The addition of black seeds (kalonji) enhances its flavor, while milk powder adds richness.

This bread is a family favorite—crispy, fluffy, and incredibly satisfying!


Ingredients

For the Dough:

  • 2 cups white flour (or 1 cup white flour + 1¾ cups brown flour if using a mix)
  • 4 tbsp milk powder
  • 2 tbsp oil
  • 1–2 tsp black seeds (kalonji)
  • ½ tsp salt

For the Yeast Mixture:

  • 200ml lukewarm milk or water (or a mix of both)
  • 1–2 tsp sugar or honey
  • 2 tsp active dry yeast

For Frying:

  • Oil for deep frying

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, combine lukewarm milk/water, sugar (or honey), and yeast.
  2. Stir and let sit for 10 minutes until frothy.

Step 2: Prepare the Dough

  1. In a large mixing bowl, whisk together flour, milk powder, black seeds, and salt.
  2. Add the yeast mixture and oil, then knead into a soft, smooth dough.
  3. Cover and let it rise for 1–2 hours, or until doubled in size.

Step 3: Shape the Dough

  1. Divide the dough into 3–4 equal portions.
  2. Roll each portion into a large circle (about ¼-inch thick).
  3. Cut into 4-8 triangles depending on the size.

(For freezing: Roll and cut the dough, then freeze the pieces. Fry directly from frozen when needed.)

Step 4: Fry the Bakhmiri

  1. Heat oil in a deep frying pan over medium heat.
  2. Carefully drop in the dough pieces and fry until golden brown on both sides.
  3. Place the fried Bakhmiri in a mesh basket or on a paper towel to drain excess oil.

Tips for Perfect Bakhmiri:

Medium Heat: Fry on medium heat to ensure even cooking inside and a golden crust outside.
Proper Oil Temperature:

  • If the oil is too hot, the bread will brown too quickly and remain raw inside.
  • If the oil is too cold, the bread will absorb too much oil and become greasy.
    Make Ahead: You can freeze the dough after rolling and cutting—just fry straight from the freezer!

Serving Suggestions:

  • With Shakshuka – A perfect breakfast pairing.
  • With Curries – Complements chicken, meat, or vegetable curries beautifully.
  • As a Snack – Enjoy warm as it is, or drizzled with honey or jam
