Maamoul is a traditional Middle Eastern cookie filled with dates, nuts, or figs. Buttery and soft, it has a delicate flavor and is often enjoyed during special occasions. This is a very simple and delicious version of Maamoul.





Recipe


Ingredients

For the dough

  • 1¼cups all-purpose flour
  • Pinch of salt 🧂
  • 100g unsalted butter, melted 🧈
  • 1-2 tsp orange blossom water (for fragrance)
  •  ¼ cup condensed milk (or milk if you prefer a lighter texture)

For the Filling:

  •  ½ cup pitted dates, tightly packed
  • 1 tsp ghee (clarified butter)
  • A few strands of saffron, soaked in a mix of rose water and orange blossom water
  •  ¼ cup mixed crushed nuts (almonds, pistachios, cashews, or a blend of your choice)

Instructions:


For the Dough:

  1. Combine Dry Ingredients: In a bowl, mix together the flour and a pinch of salt.
  2. Incorporate Wet Ingredients: Add the melted butter, condensed milk, and orange blossom water. Stir until a dough begins to form. 
  3. Rest the Dough: Cover the dough with a damp cloth and let it rest for 20-30 minutes. This helps the dough bind better and become easier to shape.

For the Filling:
  1. Prepare the Date Mixture:In a blender or food processor, pulse the pitted dates, ghee, and the saffron-water mixture until smooth. If the mixture is too thick, add a small splash of water or more ghee to reach a smooth paste-like consistency.
  2. Add the Nuts: Stir in the crushed nuts until well combined, and set the mixture aside.

Assembling Maamoul:

  1. Shape Dough Balls: After resting, divide the dough into 16 equal portions (or more, depending on the size you want).
  2. Shape Filling Balls:Similarly, form the date-nut filling into small balls (roughly the same number as the dough balls).
  3. Fill and Shape:Take a dough ball, flatten it in the palm of your hand, then place a filling ball in the center. Gently pinch the edges of the dough around the filling, sealing it tightly to form a ball again. Repeat for all dough and filling balls.
  4. Press into Molds: Using a Maamoul press (or your hands if you don’t have one), shape the filled dough into your desired shape. Lightly flour the press or your hands to prevent sticking.

Baking:

  1. Preheat Oven:Preheat your oven to 180°C (350°F). 
  2. Bake: Place the shaped Maamoul on a baking sheet lined with parchment paper. Bake at 160°C (320°F) for 20-25 minutes, or until golden brown around the edges.
  3. Cool and Serve: Let the Maamoul cool on a wire rack.  
  4. Optional: Dust with powdered sugar before serving for an extra touch of sweetness.

Flavors:You can also add a pinch of cinnamon or nutmeg to the filling for extra warmth.
Make Ahead: Maamoul tends to taste better the next day as the flavors develop.
