Creamy Chicken Bread
Dough Ingredients:
- 3 cups all-purpose flour
- 1 tbsp sugar (optional)
- 1 tsp salt
- ¼ tsp baking powder (optional)
- 3 tbsp melted butter or oil
- 1 cup lukewarm milk
- 1 tbsp yeast
- 1 tsp sugar or honey (for activating yeast)
Filling Ingredients:
- 250-300g cooked chicken, shredded
- 2 tbsp butter
- 1 large onion (or 2 small), finely chopped
- 2 tbsp flour
- Salt, to taste
- ½ tsp black pepper
- ½ tsp garam masala
- 1 cup milk
- 2 green chilies, finely chopped (optional)
- 2 tbsp chopped parsley or coriander
- Cream cheese (optional)
Instructions:
Step 1: Prepare the Dough
- In a small bowl, mix lukewarm milk, yeast, and 1 tsp sugar or honey. Let it sit for 5-10 minutes until foamy.
- In a large mixing bowl, combine flour, salt, baking powder, and sugar.
- Add melted butter or oil and mix.
- Pour in the yeast mixture and knead into a soft, smooth dough (about 8-10 minutes).
- Cover and let it rise in a warm place for 1-2 hours, or until doubled in size.
Step 2: Prepare the Chicken Filling
- Heat butter in a pan over medium heat, add onions, and sauté until soft.
- Sprinkle flour over the onions and stir well.
- Slowly pour in milk, stirring continuously to avoid lumps. Cook until slightly thickened.
- Add shredded chicken, salt, pepper, garam masala, and green chilies (if using). Mix well.
- Stir in chopped parsley/coriander and cream cheese.
- Let the filling cool
Step 3: Shape & Bake
- Preheat oven to 180°C (350°F).
- Divide the dough into equal portions and roll each into a circle or oval.
- Add a portion of the filling to one side, leaving space at the edges.
- Fold over and seal the edges well (or shape into a braided or stuffed bread).
- Brush the top with milk or egg wash for a golden finish.
- Bake for 18-20 minutes or until golden brown.
Step 4: Serve
- Brush with extra butter and serve warm.
Optional Variations:
- Spicy Version: Increase the green chilies or add a pinch of red chili flakes.
