Creamy Chicken Bread

Dough Ingredients:

  • 3 cups all-purpose flour
  • 1 tbsp sugar (optional)
  • 1 tsp salt
  • ¼ tsp baking powder (optional)
  • 3 tbsp melted butter or oil
  • 1 cup lukewarm milk
  • 1 tbsp yeast
  • 1 tsp sugar or honey (for activating yeast)

Filling Ingredients:

  • 250-300g cooked chicken, shredded
  • 2 tbsp butter
  • 1 large onion (or 2 small), finely chopped
  • 2 tbsp flour
  • Salt, to taste
  • ½ tsp black pepper
  • ½ tsp garam masala
  • 1 cup milk
  • 2 green chilies, finely chopped (optional)
  • 2 tbsp chopped parsley or coriander
  • Cream cheese (optional)

Instructions:

Step 1: Prepare the Dough

  1. In a small bowl, mix lukewarm milk, yeast, and 1 tsp sugar or honey. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour, salt, baking powder, and sugar.
  3. Add melted butter or oil and mix.
  4. Pour in the yeast mixture and knead into a soft, smooth dough (about 8-10 minutes).
  5. Cover and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 2: Prepare the Chicken Filling

  1. Heat butter in a pan over medium heat, add onions, and sauté until soft.
  2. Sprinkle flour over the onions and stir well.
  3. Slowly pour in milk, stirring continuously to avoid lumps. Cook until slightly thickened.
  4. Add shredded chicken, salt, pepper, garam masala, and green chilies (if using). Mix well.
  5. Stir in chopped parsley/coriander and cream cheese.
  6. Let the filling cool

Step 3: Shape & Bake

  1. Preheat oven to 180°C (350°F).
  2. Divide the dough into equal portions and roll each into a circle or oval.
  3. Add a portion of the filling to one side, leaving space at the edges.
  4. Fold over and seal the edges well (or shape into a braided or stuffed bread).
  5. Brush the top with milk or egg wash for a golden finish.
  6. Bake for 18-20 minutes or until golden brown.

Step 4: Serve

  • Brush with extra butter and serve warm.

Optional Variations:

  • Spicy Version: Increase the green chilies or add a pinch of red chili flakes.
