Fried Rice and Sweet Chilli Sauce

🍗🍚Fried Rice with Homemade Sweet Chilli Sauce🍚🍗


Recipe:


Sweet Chilli Sauce

Ingredients 

  • ½ Cup Water
  • ¼ Cup white vinegar
  • ¼ Cup Jaggery/ sugar ( I prefer jaggery taste)
  • 1 Teaspoon Soy Sauce
  • 1 Teaspoon Paprika Powder
  • 2 Garlic cloves Crushed
  • Salt as needed

For cornstarch slurry

  • 1- 1½ Teaspoon Cornstarch ( adjust according to desired thickness
  • 1 Tablespoon Water

Directions 

  • Add water, vinegar, jaggery, soy sauce, garlic, paprika and salt to a sauce pan and mix well.
  • Turn on the flame and boil till the jagg is melted.
  • Make cornstarch slurry by mixing cornstarch and water.
  • Pour the cornstarch slurry into t sauce and mix well.
  • Cook for a f minutes, ie cornstarch is cooked and the sauce has thickened.

💕Enjoy it with spring rolls, crispy fried chicken, fried rice etc💕


Fried rice

  • Cook the basmati rice in water with salt. ( It took me 10 minutes)
  • I' ve added whole spices ( bay leaf, cinnamon stick, cloves and cardamom) and ghee for flavour.
  • Drain and let it cool down, refrigerate for 4 hours or overnight.
  • Or use the leftover ghee rice or plain rice from the previous day.
  • In a pan add butter and scramble the eggs and keep aside.
  • Season it with salt and pepper.
  • To pan add butter, oil .
  • Add in crushed garlic, sliced onions, grated carrots, capsicum, spring onion white, frozen corn ( use veggies of choice) and saute till done.
  • Add in salt pepper.
  • Mix soy sauce, ketchup, vinegar and add.
  • Add in rice and stir and fry for few minutes.
  • Add eggs and spring onion greens after turning off.
  • I've used frozen chicken strips.
  • Air-fried the chicken strips, cut into small pieces.
  • In a pan add the butter, homemade sweet chilli sauce and chicken pieces and sauté for few minutes.
  • Add to fried rice.

For chilli vinegar soy sauce

To Finely chopped green chilli add vinegar and keep it for few minutes, add in soy sauce and mix well.
