Homemade Sheets for Spring rolls
🥟 Homemade Sheets using Rotimaker (or Tawa Method)
Perfect for: Spring Rolls | Mutabbaq | Samosa etc
🌾 Ingredients
For the Dough

1 cup all-purpose flour (can also use wheat flour)

Salt – to taste

1 tsp ghee or oil
-
80–90 ml water (adjust as needed)
Cornstarch-Oil Paste

1–2 tsp cornstarch
-
1–2 tsp oil
-
Mix until smooth and lump-free
👩🍳 Dough Preparation

In a bowl, combine flour, salt, and ghee/oil.

Gradually add water and knead into a soft, smooth dough.

Cover and let the dough rest for 15–30 minutes.
🪄 Layering the Dough

Lightly flour your surface. Shape the rested dough into a rectangle and divide it into 12 equal portions.

Roll each portion into a ball.

Lightly flatten one dough ball into a small disc.

Brush the disc generously with cornstarch-oil paste, covering the entire surface.

Place a second disc on top, align it well, and brush it with paste.

Add a third disc, align, and press gently.
-
You now have a stack of 3 discs. Repeat to make 4 sets of stacked discs.
🔁 For thinner sheets, you can make stacks of 4–5 discs. If so, make smaller dough balls accordingly.
🔥 Method 1: Using Rotimaker

Preheat the rotimaker on high.

Place a stacked disc on the hot rotimaker.

Gently press and cook for a few seconds only, just until the surface looks dry and partially cooked.

Remove and cover immediately with a clean towel to retain softness.

Repeat with all stacks.
🍳 Method 2: Without Rotimaker (Tawa Method)

Roll out each stacked disc into a thin circle (like a chapathi).

Heat a tawa and cook each rolled stack briefly on both sides, just until the surface is dry — do not brown them.

Remove and keep covered.
🧊 Final Steps & Storage

Peel the sheets apart while they are still warm.

Store in an airtight container to keep them soft and pliable.

Use as needed for your preferred recipes.
