Singaporean Rice Recipe
Rice
Ingredients
- 2 cups Basmati rice
- 5-6 cups water
- ½ lime (juiced)
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon garam masala
- 1 tablespoon ghee or oil
Directions
1. Wash the rice thoroughly and soak it in water for 15 minutes. Drain afterward.
2. In a pot, bring water to a boil. Add salt, lime juice, garam masala, and ghee/oil.
3. Add the soaked rice and cook on medium heat until the rice is tender (about 15 minutes).
4. Drain any excess water and set the rice aside.
Chilli Garlic Oil
Ingredients
- ¼ cup oil (neutral oil like vegetable or sunflower)
- 6-8 garlic cloves (thinly sliced)
- 2-3 green chillies (sliced)
Directions
1. Heat oil in a small pan over medium heat.
2. Add the sliced garlic and green chillies. Fry until the garlic turns golden brown.
3. Strain the oil and reserve the fried garlic and chillies for garnish.
Chicken
Ingredients
- 2-3 Boneless chicken breast (cut in small pieces)
- Yoghurt
- Tomato paste
- Ginger garlic paste
- Kashmiri Chilli powder
- Paprika powder
- Garam masala
- Turmeric powder
- Coriander powder
- Cumin powder
- Fennel powder
- Kasuri Methi ( dried fenugreek leaves)
- Salt
- Pepper
- Ketchup
- Soy sauce
- Hot sauce
- 2 tablespoons chilli garlic oil (reserved from above)
Directions
1. In a bowl, combine yoghurt, tomato paste, ginger-garlic paste, all the spices, kasuri methi, salt, and pepper. Mix well.
2. Add the chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes (or overnight for deeper flavor).
3. Heat the reserved chilli garlic oil in a pan over medium heat. Add the marinated chicken and cook until the chicken is tender and fully cooked (about 10-12 minutes).
4. Stir in ketchup, soy sauce, and hot sauce. Mix well and set aside.
Noodles
Ingredients
- 2 packets instant noodles
- 1 tablespoon oil
- 1 cup mixed vegetables (onion, capsicum, carrot, cabbage – thinly sliced)
- 2-3 spring onions (white part chopped, green part reserved for garnish)
- Salt and pepper (to taste)
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- Noodle seasoning packets (from the instant noodles)
Directions
1. Cook the instant noodles according to the package instructions. Drain and set aside.
2. In the same pan used for the chicken (or a new one), heat oil over medium heat.
3. Add the chopped spring onion whites and mixed vegetables. Stir-fry for 2-3 minutes until slightly tender.
4. Add salt, pepper, soy sauce, and ketchup. Mix well.
5. Toss in the cooked noodles and the seasoning in packet. Stir to combine and set aside.
Sauce

- 1 cup mayonnaise
- ½ cup ketchup
- 1 tablespoon mustard sauce
- 1 teaspoon hot sauce (adjust to taste)
- Salt and pepper (to taste)
Directions
1. In a bowl, mix mayonnaise, ketchup, mustard sauce, hot sauce, salt, and pepper until smooth.
