Waffles, Blueberry sauce and Honey

Light & Crispy Waffles
Golden, fluffy, and delicious—perfect for breakfast or brunch!
Recipe:
Ingredients
- 2 Eggs Separated
- 1 ½ Cup Milk
- ½ Lime
- 1 Teaspoon Vanilla essence
- 1 Tablespoon oil
- 2-3 Tablespoon raw sugar
- 1¾ Cups Flour
- ¼ Cup Corn Flour
- ½ Teaspoon baking soda
- ¾ Teaspoon baking powder
- ½ Teaspoon salt
Directions
- Prepare Buttermilk: Mix lime juice into milk and let sit for 5-10 minutes.
- Whip Egg Whites: Beat until soft peaks form.
- Mix Dry Ingredients: Combine flour, corn flour, baking powder, baking soda, and salt.
- Prepare the batter: Add milk ( buttermilk substitute), egg yolks, oil, vanilla essence and sugar to dry ingredients and mix well. (Mix either with hand whisk or on low speed with the egg beater)
- Fold in Egg Whites: Gently fold into the batter for a light texture.
- Cook the Waffles:
- Preheat and grease the waffle maker.
- Pour batter, filling only ¾ of the waffle maker as it expands while cooking.
- Close and cook until steam reduces and the raw batter smell
- Cool Properly: Place waffles on a wire rack to prevent sogginess.
Tip: You can skip corn flour and use 2 cups of all-purpose flour, but corn flour makes them lighter! Enjoy warm with syrup, fruit, or your favorite toppings!
Blueberry Sauce
A simple, flavorful sauce perfect for waffles, pancakes, or desserts.
Ingredients
- ½Cup Frozen Blueberries
- 3-4 Tablespoon Sugar (as needed)
- 2-3 Tablespoon water
- Few drops lime juice
- Pinch salt
- Pinch cinnamon Powder
Instructions
- In a saucepan, combine blueberries, sugar, water, lime juice, and salt.
- Bring to a boil, then mash the blueberries with a spatula.
- Simmer until the sauce thickens.
- Stir in cinnamon and mix well.
Note: Measurements are approximate—adjust to your preference!
Honey cream
A smooth, lightly sweetened cream perfect for desserts.
Ingredients
- 125 ml thick cream
- 2 Tablespoon honey
Instructions
- Add honey to the cream and mix well.
- Adjust sweetness as needed.
Enjoy as a topping for waffles, pancakes, or desserts!
