Creamy Chicken Soup in Bread Bowl

 







 

Recipe:

Creamy Chicken Soup

Ingredients

1 Boneless chicken Breast

Salt

Pepper

Bay Leaf

Water

Butter

Olive Oil

1  Garlic Crushed

1 Small Onion finely Chopped

1  Carrot Grated

1 Can Corn

Onion Greens

3 Tbsp. Flour

2 Cups Chicken Stock (from cooking chicken)

150ml Half and Half (or 75ml milk+75ml Cream)

1/2 Tsp.. Paprika Powder

1/2 Tsp. Onion Powder

1/4 Tsp. Garlic Powder

1/4 Piece Chicken Cube (optional)


Directions

Cook Chicken with salt, pepper, bay leaf and water. 

Remove the bay leaf and reserve the stock. I got 2 cup chicken stock.

Shred the chicken and keep aside.

In a pan, add olive oil and butter. Add crushed garlic and finely chopped onion and sauté well.

Add in grated carrot and cook for few min. Add corn (I used canned corn, if using frozen one, cook with carrot) 

Add salt, pepper, paprika, onion and garlic powder.

Add in flour and mix and cook well. Add stock while still hot and mix well. Add chicken cube, if using.

bring to boil, It will start to thicken. Add warm half and half (or milk and cream mix)

Bring to boil and garnish with onion greens. 


Bread Bowl

Ingredients

2 Cups Lukewarm Water

1.5 Tbsp.. Instant Yeast

1 Tbsp.. Sugar/Honey

2-3 Tbsp. Olive Oil

5 Cups Flour (2 Cups Brown+3 Cup White) more if needed also for shaping.

Salt as needed.

Directions

Proof the yeast in lukewarm water with sugar/honey.

Add olive oil and mix well.

Add salt to flour and mix.

Pour the yeast mix and knead to a soft less sticky dough. 

Cover and let it rest 1-2 hours or double in size.

On a dusted surface knead the dough, divide them into balls , shape them.

Put an 'X' on top, let it rest for 10-15 min.

Brush with egg wash or milk or cream and bake in 200 C preheated Oven for 25-30 min. or till done.
