Kanafeh/kunafa

                          Arabic sweet dish filled with cheese

                       





Kanafeh (Arabic: كُنافة‎, [kʊˈnaːfa]) is a traditional Middle Eastern dessert made with shredded filo pastry.
soaked in sweet, sugar-based syrup, and typically layered with cheese, or with other ingredients such as clotted cream or nuts, depending on the region.In Arabic, kunāfa may refer to the string pastry itself, or to the entire dessert dish. In Turkish, the string pastry is known as tel kadayıf, and the cheese-based dessert that uses it as künefe. In the Balkans, the shredded dough is similarly known as kadaif, and in Greece as kataifi, and is the basis of various dishes rolled or layered with it, including dessert pastries with nuts and sweet syrups.(Source:Wikipedia)



RECIPE
 
Ingredients

2.5 cup Kataifi (kanafa dough)
 
20g softened butter/ghee(at room temp.)
 
2 Tbspn Shredded Mozzarella Cheese
 
2 square Kiri cheese
 
125ml thick cream
 
Sugar Syrup -قطر) (Ater --قطر)
 
Nuts (pistachios) for garnishing

Directions

Mix kanafah dough with softened butter.

Take half the dough spread in a 20cm greased non-stick pan.

Sprinkle shredded mozzarella cheese.

Mix cream cheese and thick cream and spread evenly .

Add rest of the kanafah dough and press gently.

Cook on medium flame.

When edges starts turning golden brown (takes 5min. Approx) flip and cook the other side untill done( 5 min.)

Drizzle sugar syrup and garnish with pistachios.
 
 


Sugar Syrup for arabic desserts (Ater -قطر)
 
 


 
Ingredients

1 cup sugar (I prefer raw sugar)
 
1/2 cup water
 
1/2 tspn lime juice
 
1/2 tspn rose water
 
1/2 tspn orange blossom water
 
few saffron strands
 
 

Heat sugar and water in a pan.

when it start boiling  add a few drops of lime juice and boil for 5 min.

Turn off the flame. 
Add rose water, orange blossom water, saffron strands .
